Indulged in some French goodness this past weekend, baking some Madeleines for a Mother's Day treat (see recipe here). This bite-size dessert is so simple its great to have with a cup of milk or dunk in a cafe au lait. It is important to note though that the recipe has such a basic ingredient list, good technique is the key to keeping them light, fluffy and golden. When using my electric mixer I found it very helpful to change my beaters to a whisk, beating the eggs versus whisking in the sugar. Also do not overfill the mold. Trust me you will find yourself cutting out each piece as I did. Happy Baking!
